This pairing allows the natural fruitiness of this California blend to shine through. It brings up the acidity a touch as well as enhancing the structure/body and the oak.
1/4 cup panko crumbs
2 tbsp. each Dijon mustard and softened (partly melted) butter
1 shallot diced very fine
1/2 tsp powdered thyme – sprinkle carefully to mix and not clump
2 cloves garlic diced very fine
1 lb lean ground beef
1 jar Apple & Fig spread (Sobey’s, cheese counter)
Mix all the spices well, add all ingredients from the top section, mix well. Add to the meat and mix well. Use 1/2 tbsp. measure to make appetizer sized meatballs. Bake at 350 degrees on a roasting rack for 12 minutes, turn for 12 more minutes. Can be made ahead.
Serve warm with a nice sized dollop of room temperature spread.
