Ahh, Champagne – the wine that makes all people beautiful.  When to drink Champagne?  The rule is : Before, During and After!  This Christmas season, greet your guests or significant other with a glass of Champagne!

The cork should be eased out slowly with a “sigh”,  and not a loud “pop”.  Chill the bottle in the fridge for 2 to 3 hours, or for 30 minutes in an ice bucket.

Crystal glasses are best in which to serve Champagne, and don’t worry about pairing it with specific foods, because Champagne goes with just about everything.  Keep in mind that glasses must be scrupulously clean with no detergent residue which can strip the wine of its bubbles.

Left over Champagne?  Why not add it to your morning eggs or omlette ?

I think a good New Years Resolution is to drink more of this style of wine!
