TEMPERATURE & FERMENTATION:
Keep your carboys warm & toasty!
Every year when the colder weather sets in, we get calls from customers with stuck fermentation issues! Many times, the simple explanation is temperature. Yeast gets pretty sedate in cold weather. The result can mean sluggish or stuck fermentations , excessive carbonation in the wine and/or prolonged clearing periods. Reduce these possibilities by ensuring a constant temperature of
20 to 23 degrees C , while keeping in mind that ambient room temperature is never the same temperature as fluid. Measuring temperature with a liquid thermometer or a stick-on thermometer is strongly recommended, as fluids usually have a lower temperature than the surrounding air.
Keeping liquid temperatures between 20 to 23 degrees C will also allow for more consistent specific gravity readings.
Keep primaries and carboys away from “heat sinking” areas, i.e., concrete floors, windows, doors, walls with exterior exposure, and any areas where temperature can vary. Brew belts are excellent ways to ensure constant fermentation temperature.
Paying extra care and attention to the points above will go a long way to ensuring consistent success.
