MORE REASONS TO MAKE WINE AT HOME
I'll admit it. Procrastination has caught up with me. This spring, I ran out of homemade wine. Since then, I've had to pay $25 - $45 a bottle. I got tired of that in a hurry, so finally I set last weekend aside to do “wine chores” and started TEN kits, most of which have been sitting in my basement since November.
Five are Limited Editions, two Eclipse and three Selection. Seven white and 3 red. I thought I should make mostly whites as they can be ready to drink a lot sooner than reds.
My cost was $1300 (receiving one at half price because I had hit over 10 kits), which will produce 280 bottles, at an average of $35 commercial value each, they would be almost TEN THOUSAND dollars at the liquor store. I am determined to quit procrastinating.

We've just received a Limited Release Eclipse named “Forza” (Italian for "strength"). This is an Amarone Style featuring Corvina, Sangiovese, and Barbera juice along with grape skins for added depth. LOCALS CREATE WINNING WINES
There is some excellent wine making going on in Airdrie. Friends Kellie Babin and Kelly Mackay both earned gold at the 2015 WineMaker International Amateur Wine Competition, April 10-12 in Vermont. “It was quite exciting, I didn’t expect to win a medal at all, let alone a gold and bronze,” said Mackay, explaining she shipped bottles to the competition and was thrilled to be successful. Babin was equally excited to put Airdrie’s name on the map. “We’ve been happy dancing [since we found out we won],” she said. Babin took gold in the White Vinifera Blend category against 67 other entries, and Mackay beat out 50 other entries for her top spot in the Stone Fruit category for her apricot wine. Babin and Mackay also earned bronze medals.

APPLE CIDER AVAILABLE AGAIN, FOR A SHORT TIME
A couple of tips for making your best cider:
Care should be taken to minimize contact with the air while fermenting, because cider does not like exposure to oxygen. Use a Home Vintner primary with airtight seal, a bung and airlock. Be sure to keep your carboys topped up.
When racking, don't splash the cider down the side of the carboy as that will create more oxygen. Bottle as soon as possible.
Using two cans of cider will produce much more flavourful results. Sparkling cider will have a sharper taste than a still one.

In order to honour this guarantee, it is absolutely essential that you use our corks, as there are many sub-standard corks on the market. Also, please remember to peel off the code sticker on the top of the box and keep it with your records. These codes are full of important information for both the retailer and the consumer.

2. All claims require the batch code which is a peel off label on the top of the box - no exceptions.

THE CRABTREE EFFECT
Why does homemade beer sometimes tastes more like cider? Catabolite repression is the technical term when beer kits are cut with large amounts of sucrose or glucose. The yeast will behave differently creating by-products, which leaves a cidery taste. Fusel alcohols will remain, giving a cloying unnatural sweetness combined with a harsh bitterness and a deceptive impression of body and mouth feel.

CERVEZA BATTLE RESULTS IN A REFRESHING NEW ADD-PACK!
A few months ago Kellie from the Airdrie location and Airdrie customer David C. both decided to make a Lemon Citra Cerveza. Two different approaches were taken to come up with the best result. And the winner is - DAVID! While both methods created similar beers, David's beer has better balance and thirst quenching drinkability.
Expect this beer to be golden yellow with nice carbonation and a bright, clear finish. With subtle lemon/Citra aromatics on the nose, this beer remains in balance by lightly flavouring the beer while still allowing its character to shine through. Not too sweet, but refreshing with a crisp and very slight tang on the finish. In all, very quaffable on a hot day!
