Tips on your Cider making: Cider does not like exposure to oxygen, so care should be taken to minimize contact with the air while fermenting. Use a Home Vintner primary with airtight seal and a bung and airlock, and be sure to keep your carboys topped up. When racking, don't splash the cider down the side of the carboy and bottle as soon as possible. Using 2 cans of Cider will produce much more flavourful results, and sparkling cider will have a sharper taste than a still one. FERMENTING IN THE SUMMER When making wine or beer in the summer, you must avoid large temperature fluctuations while fermenting. Drastic temperature changes can impart off-flavours to your wine or beer. Moderate temperature changes are not a problem, but don't be tempted to ferment in the garage over the summer! Wrapping a blanket around your carboy can keep the temperature more stable. If you are fermenting in a hot apartment, the wet T-shirt method works well. A carboy in a tray of water with a wet cotton T-shirt over it will keep things cool and steady. Every fall, we have a lot of wine and beer makers panicking because they've depleted their cellars much faster than expected due to entertaining over the summer. Think ahead, and don't be caught with an empty cellar! Mozart spent his summers in Prague, presumably drinking Pilsner beer, and composing great symphonies. This is an excellent summer beer on its own, but we can take this beer in many different directions with our add-on packages. The addition of extra Saaz hops to the primary gives it a more distinct aroma. We also have a special add-pack with malt and 2-stage hops to really increase the complexity. Don't forget that 70% of beer's extra flavour comes from the yeast, hence we carry special liquid Pilsner yeast. "Na zdravi!" FROM OUR SATELLITES DURING JULYBergeron Cheese Shoppe, Cochrane - July brings picnic season! We are offering 10% off two styles of cheese this month. • "La Patte Blanche" is a mildly sweet goat milk gouda from Quebec. (This will pair especially well with a Shiraz, but also with many others) • "Le Roitelet" is a French double cream brie. (This will pair well with both white and red, it's pretty much great with anything!) Both will be a hit at your picnic table or backyard BBQ! Water Pure and Simple, Drumheller - free jug of water with the purchase of any wine kit ($10 refundable deposit required). Olds Droplets Water Company, Olds - offers a 10 per cent discount to all students who are attending the Brewmaster course at the Olds College. The Alberta Gaming & Liquor Commission (ALGC) standard mark-up rate for beer was $.98 per litre plus GST on the Provincial tax. Since March 2015 it is now $1.20 per litre plus GST. Our beer kits produce 22 litres after you rack off the sediment, so the tax you don’t pay is $1.20 ALGC plus GST = $1.26 x 22 litres = $27.72. As you may know there is no tax on a beer kit, so do the math, Amber is on sale during July $49.95 - $4.00 = $45.95. Our most popular glass beer bottle is the 500 ml. So $45.95 minus the $27.72 tax you don’t pay = $18.23. The kit will produce 44 - 500 ml bottles at 41¢ a bottle. (Bottles and caps are not included in this calculation as most clients already have them) click here to view the AGLC Mark-up Schedule effective March 27, 2015... 16 ISLAND MIST ON SALE IN JULY - $5 OffIsland Mist is a delicious alternative to everyday wines and wine coolers.
