LE14 WINE & FOOD PAIRING

There is something in the way the subtle flavours and balance of wine really come alive when paired with its food counterpart.  It's something we like to call the ‘wow factor’. Interested in discovering this for yourself?  You’re in luck! We are hosting a series of wine & food pairing evenings  November 6, November 27, and December 4 where you can experience what a difference the right dish can make. Here, not only will we be showcasing commercial examples of our upcoming special edition wines, but you will be trying them with perfectly paired food.

Wine and food have gone hand in hand since around 6000 BC when people first started fermenting grapes. It’s interesting to look at cultures with a long history of grape growing and to see how their cuisine and wine mesh together perfectly, as if both food and wine were specifically designed with the other in mind.

Take Bordeaux in France for example, Bordeaux is often described as a ‘food wine’ but what does this mean? Having a glass of Bordeaux on its own, while certainly enjoyable, isn’t nearly as mind blowing as pairing with with duck or lamb traditionally grown in Bordeaux, or with a rich creamy mushroom truffle sauce which the region is also known for. 

Paul has been hard at work consulting with the Home Vintner Chefs, and we are very excited to share this event with you. Seating is limited, so be sure to reserve your spot soon! Tickets are $10 per person, and the event starts at 7pm at the Highwood Community hall, 16 Harlow Ave NW.

AGING & DECANTING YOUR LIMITED EDITIONS

Did you know that homemade wine kits can age on par or even above commercial brands? If you start with a high quality kit, such as our Limited Editions, you can age it just as long as a high end commercial equivalent and reap the benefits.

For example, last night I opened a bottle of the 2003 Sicilian Primitivo Limited Edition.  It has aged beautifully! Primitivo is a dark-skinned grape that produces inky, tannic wines that are generally high in alcohol, deep in colour and intense in flavour. Primitivos should have mouth puckering tannins and a certain bitterness. Therefore, they should be aged as well as decanted.   Decanting wine is a good idea for any "big" red with heavy tannins, as well as aged wine (like the '03 Limited Edition Primitivo!).

Decanting is a good way to eliminate unpleasant solids in your glass, as aged wine can often produce sediment.   Decanting also helps the wine to open up and reveal its complexities. The 2014 Limited edition kits are ready to order now. Ask us about which wines have the best potential for ageing.

The autumn limited run of Paddock Wood beer kits are now in stock.  Direct from Saskatchewan's first microbrewery, you can make perfectly engineered craft beer at home.

Craft beer breaks all the traditional rules, as Paddock Wood say themselves "There are so many stereotypes surrounding beer... it's a man's drink... it's only good in the summer to quench your thirst... taste doesn't really matter." But, stereotypes don't apply to craft beer at all. There are so many distinctive flavours, you really need to taste them.  You will be pleasantly surprised.  SO what are you waiting for? Be adventurous!

REMOVE THE CO2 FROM YOUR WINE BY RENTING ONE OF OUR DEGASSERS

To get the best out of our quality kits, it is extremely important to get the C02 gas out of your wine.  The by-products of fermentation are  C02 gas and alcohol. At the higher altitudes of Alberta, it is more difficult to remove C02 from your wine than the directions would have you believe. Yes, stirring will agitate the gas out over time. However, we do not recommend drill attachments as after prolonged use the wine can taste tired and lose its character from over exposure to oxygen.  Not removing the C02 will leave the wine with a sharp edge and off odour.

We strongly recommend using a vacuum system, either a Vacuvin pump, or you can rent our Home Vintner degasser.
