This sparkling apple cider is the ultimate in refreshment.  Harvested from premium New Zealand fruit orchards, Black Rock produces the taste and clarity enjoyed by cider lovers.  There are two options available: 1 can plus 1 kg of dextrose will produce 23 litres of a traditional Canadian cider.   Two cans without adding dextrose will produce a stronger European style cider.

CHEESE AND BEER

Cheese pairing?  Most people think wine, but beer and cheese really are a match made in heaven. One of the things beer has going for it is its texture and carbonation, as if it’s constantly scrubbing your palate in anticipation of the next bite.  Beer and cheese have had a lengthy partnership throughout history. Belgian monks have been making beer and cheese for hundreds of years.  Chimay, for example, produces world class beers and a cheese ripened by a daily beer bath.

Serve cheese at room temperature to really bring out the flavours and match textures. Think malty beers with nutty aged cheese, delicate young beers with fresh cheeses, and strong, sweet beers with blue. In fact, aged cheeses such as cheddar, gouda and parmesan work especially well with beer because their fat content can coat your mouth.  They benefit greatly from the palate cleansing nature of beer.

FINING AGENTS

Many people who make wine at home treat it as an art.  Fining agents in kits are designed to clear a wine quickly and efficiently.  However, taking your time with your kit and allowing it to age as it ferments can yield amazing results.  This means that the amount of fining agents needed are greatly reduced, as the wine has been given a chance to clear on its own. For example, after a year of ageing in the carboy, while the kits contains 15 grams of bentonite, it may only take 5 grams to clear, and you may only need one quarter of the isinglass (for whites) or chitosan (for reds). It makes sense to use minimal amount of clearing agents.

FRUIT AND BEER

Fruit beers have witnessed a surge in popularity in recent years, and rightly so!  Fruit can be a refreshing addition to beer.  It gives texture and complexity to the finished product.  Adding fruit to your home beer kits can be a bit tricky, as fresh fruit adds additional fermentable sugars. By carefully following the correct fruit to beer ratios, you can create a unique fruit beer all your own.

When making fruit beer, take note that fresh is NOT best.  If you freeze fresh fruit beforehand, freezing will break down its cell structure, which brings more flavour to your final product.  It is important to add the fruit just before fermentation is complete.  Your hydrometer should read 1.020

After adding the fruit, wait three to four days before racking to the carboy.
