We have a full selection of Winexpert kits in our NW, NE and Airdrie store.  Our Satellite stores have a smaller selection in Cochrane, Drumheller, Olds and Rocky Mountain House.  We would like to offer our complete line-up of wine and beer to our Satellites with on line ordering.

Simply go to our website and choose the kits that you want.  Add each one to your Cart and proceed to check out.  You will need to indicate the store that you want to pick up the kits from.  Payment is secure, you may use VISA or MC.  Your kits will be added to the stock going to the Satellite and you will be contacted when your kits arrive for pick up.

California is the best known wine growing area in all of the United States, producing almost 90% of American wine. Californian wines are world renowned, but this wasn't always so.  While California had been growing grapes since the late 19th century, it wasn't until the late 20th century that historic California wines burst onto the world stage. At the Paris Wine tasting of 1976, Californian wines were blind tasted by a panel of expert judges alongside French wines, which were at that time believed to be the best in the world.  The Californian wines dominated every category, as some of you might remember from the movie "Bottle Shock".

OAK

Oak derivatives have come a long way in the last ten years.  Many are now made from top-quality European and American sources of air-dried, toasted oak, as opposed to what most people suspect (i.e., floor sweepings).  By including them in the primary fermenter, the wine changes to oak biochemically, transforming the more highly aromatic flavours into less aromatic and softer flavours, much in the same way that fermentation does.  It also increases the amount of polysaccharides (long-chain unfermentable sugars) which contribute to length on the palate.  You can add extra oak, leave it out, or change the toast level according to your desires.  You may even choose to add the oak post-fermentation to achieve a more assertive character.  Ask the staff for tips.

KEN’S OAK TIP

I saved the Oak cubes from my wine kits, let them dry out and then put the chips in my smoker and they added an amazing flavour blast to my steak!  So far, I've saved chips and cubes from Stag's Leap Merlot, Amarone, Carmenere and GSM.  You could always buy flavoured woods at a store to use in your smoker; but why not try this?  And in the meantime, enjoy some great wines you've made yourself!

HOPS

Nowadays, beer includes hops, which were not added to beer until the 16th century.  “Beer was the first alcoholic beverage known to civilization, however, who drank the first beer is unknown.  Historians theorize that humankind’s fondness for beer and other alcoholic beverages was a factor in our evolution away from a society of nomadic hunters and gathers into an agrarian society that would settle down to grow crops (and apparently drink).  The first product humans made from grain & water before learning to make bread was beer.”

• Add Saaz hops to our Barons Pilsner to make a classic Prague Pilsner
• Add Cascade hops to our Barons Pale Ale to create more of an IPA
• Add Fuggles to any English style beer for more of a British pub style beer.

PAT’S CHERRY PORTER USING OUR BARONS BROWN ALE

Each glass of Cherry Porter is lush and creamy with a fruity aroma.  Rich and sensual, the flavour is reminiscent of Black Forest cake, with sweet chocolate notes and a slightly smoky character from the roasted malts.  Watch your local farmers markets this summer, you will need 15 lbs of whole cherries.  Instructions are in our stores.

 

LAGERING

Lagering is a secondary fermentation at temperatures as low as 4˚C.  It only works with one of the special cultures of lager yeast that we sell.  At this temperature lager yeast ferments very slowly, giving a wonderful ‘cleanness’ that allows the full flavour of the malt and hops to come through.  The beer also drops most of its suspended particles including the proteins responsible for chill haze.  Make sure you have the ability to hold your beer at lager temperatures over an extended time - it can take a month or longer.  Be sure to follow the instructions on your liquid yeast package for pitching and temperature ranges.  Ask the staff for recommendations.

Most stores sell their Brewer's Best beer kits as a 19 litre kit, but at the Home Vintner we have  specially formatted the kit with special additions so you can enjoy the full 23 litres.  Not only do you get 4 more litres of beer, but you can use the standard 23L carboys you use for all your other wine and beer kits!
