Kelly's Raspberry Fruit Beer
Kelly E, a customer of the Airdrie store, gave us a bottle of her Raspberry beer. Her base was the Barons Mexican Cerveza and she followed our recipe by adding frozen raspberries to the wort in the primary stage. She also used a liquid Wyeast instead of the dry yeast that comes with the kit. It was fabulous! What a great job!! It was right up there with my favourite raspberry fruit beer - the Wild Rose WRaspberry Ale -- the perfect beer for hot summer days! She is currently brewing a Blueberry fruit beer -- hope she shares a bottle of this one as well !! Pat, Airdrie store

She used 3 pkgs ( 600 g each ) of raspberries found in the frozen section - either Presidents Choice or Dole brand. Both these brands have NO sulphites or sorbates - just the fruit - which is very important. Any sorbates will kill off the yeast. Let the fruit thaw, put into a cheese cloth or hop sock and put into the primary. Add liquid yeast - Kelly used Belgian Wit . It is a good idea to open the primary and squeeze the hop sox daily in order to squeeze all the juice out of those raspberries. Give it a try !! |
